Ingredients

  • 400 g of Crema di Rugiada
  • 150 g of Bresaola
  • 1 zucchini
  • 30 g of currant

Procedure

The tartare with Crema di Rugiada is a quick and easy protein recipe if you want a gourmet main dish characterized by ultralight creaminess: gives authenticity and flavour to a diet with a goodness of 100% apulian milk. Anyway, Crema di Rugiada is a rich protein source, so combined with bresaola, also low in fat and rich in protein is a perfect match for a proteic recipe to create a delicious and quick dish.

In a baking sheet covered with baking paper put 4 single-serving rings that you will next fill half with Crema di Rugiada.

Put bresaola on the top of Crema di Rugiada and press with the bottom of the glass to make it more compact.

Spread gently the last layer of Crema di Rugiada until complete filling of the ring.

Let the tartare cool down in the fridge for about 10 minutes.

Cut zucchini into thin slices.

Put one pan with water to boil and stew slightly zucchini.

Take out the tartare from the fridge, lift slowly all the rings and decorate with currant and zucchini.
